Tzatziki in a Hurry

One of my favorite go to freezer meals that I make in bulk and freeze for a yummy weeknight dinner is Spinach and Feta Turkey Sliders. While they are so delicious as is (and quick because I literally just have to warm them up), my super simple Tzatziki sauce takes them over the top and really makes the meal. AND it’s ready in less than 10 minutes.

tzatzikiStart by slicing a cucumber lengthwise and scooping out the soft watery seeds (keeping the seeds will leave you with a tzatziki soup rather than a thick, creamy sauce). Then, finely dice the cucumber. I only use half, but if you want a chunkier sauce, go ahead and use the whole thing. Other tzatziki sauces will blend the cucumber in a food processer, but my husband says he prefers the pieces of cucumber and that they make it more refreshing. I’m a people pleaser so I skip the food processor step that other recipes will tell you do do :). In addition, some tzatziki recipes will have you salt the cucumber and let it sit to draw the water out; however, I only find this step necessary if I’m making a large batch that I want to last for a few days because it will get very watery otherwise. If you are making the sauce to eat tonight, I don’t find any need to go through that time consuming process. Who has time for that on a Tuesday night? I know I don’t.

yogurtNext, combine 1-1.5 cups (depending on how much you want) of your favorite plain Greek yogurt in a bowl. I love the texture of Chobani, and other brands fall short in my eyes, but go with whatever brand you like. To the yogurt, add the lemon juice, minced garlic, DILL! (the best part in my opinion), salt, and pepper. Stir together until well incorporated. Then, gently stir in the cucumber. Taste and adjust the dill, salt, and pepper to your liking. And that’s it, you’re done!

 

This “Tzatziki in a Hurry” is delicious on our Spinach and Feta Turkey Burgers or in a pita with spinach and grilled chicken (or whatever extra meat you have in your fridge). I also love to dip sweet potato fries in it. My one year old son loves to dip his broccoli and cauliflower in it as well! It’s truly a versatile, healthy condiment that adds a little something to your weeknight meal.

Tzatziki in a Hurry

  • Servings: 5-6

1/2 cucumber

1-1.5 cups plain Greek yogurt

2 tsp lemon juice

1 tsp minced garlic

1-1.5 tsp dried dill

Salt and Pepper

1. Slice cucumber in half lengthwise. Scoop out seeds. Finely dice half cucumber (or the entire cucumber for a chunkier tzatziki) and set aside.

2. Put Greek Yogurt in bowl and add lemon juice, garlic, dill, salt, and pepper. Stir together and taste. Add more dill, salt, or pepper as needed.

3. Gently stir in diced cucumber. Serve chilled on anything you like!
