I’ve been on a major Mediterranean kick lately. We recently got a new, pretty killer gyro spot by our house, and we also just had amazing Greek food at a restaurant named FelFel in Denver (which I’m still daydreaming about). I love Greek food because it can be so filling and so light all at once, with tons of healthy fats and minimal carbs.
It’s Friday, and my husband and I are planning on grilling ribs for dinner tonight, so I wanted something light for lunch to make up for a pretty indulgent dinner. Greek salad is perfect because it’s light and so easy to prepare. I don’t feel the need to put chicken on top to make it a meal because I use garbanzo beans as my protein (garbanzo beans are so good for you!).
I normally make this salad as just a single serving salad for myself, but you can easily put all of the ingredients into a party sized bowl and serve at a family dinner or get together! If you do that, I would lightly drizzle the dressing over the salad and toss right before serving, then have a little extra dressing on the side for those who want more.
I use a mix of romaine, spinach, and spring leaf lettuce for this salad. I love the variety of color and texture. Then I top with cucumber, tomato, red bell pepper, kalamata olives, green olives, feta cheese, and garbanzo beans. The only prep you need to do is chop your veggies and rinse and drain your garbanzo beans.
To make the dressing, simply add olive oil, lemon juice, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper to a mason jar and shake.
Seriously, this salad is so delicious and easy, there’s no reason not to have it for lunch tomorrow! Enjoy!
For Salad: (Amounts depend on single serving or party size)
Romaine, Spinach, Spring Leaf Lettuce, rinsed
Red Bell Pepper
For Dressing: (This amount will serve 2-3 large single serving salads. Double recipe for party size.)
3 tbsp olive oil
1 tablespoon lemon juice
3/4 tbsp red wine vinegar
1 clove minced garlic
1/2 tsp oregano
1/2 tsp red pepper flakes
Salt and Pepper to taste
1. Add Lettuce to large bowl.
2. Dice cucumber, tomato, and red bell pepper. Layer on top of lettuce.
3. Add olives and crumbled feta cheese to salad.
4. Rinse and drain garbanzo beans and add to salad.
5. Prepare dressing by combining ingredients in a mason jar. Shake well before serving
