July 4th is in two days, and I am seeing so many gorgeous desserts on instagram that I want! Unfortunately, I don’t want all of the sugar and carbs that come with them. I decided to develop a healthy twist on the summer favorite, fruit pizzas.
Traditionally, a fruit pizza is a sugar cookie topped with a cream cheese frosting and fruit. This combination can often be too sweet and heavy, especially when it’s 90+ degrees outside, so I decided to make my base a low carb, low sugar shortbread cookies.
These are so easy to make and the texture is amazing- crispy on the outside, moist in the middle, and in and out of the oven in under 15 minutes. How’s that for an efficient cookie? You don’t even need to worry about mixing wet and dry ingredients together.
Simply add all of the ingredients to a large bowl and stir until it forms into a dough (you may need to use your hands to help it along). If the dough seems a bit too dry, work in another tsp of water.
Once in a dough, form a 1/2-3/4 inch ball of dough and flatten with your hands (they will not spread). Arrange on a baking sheet lined with parchment paper and bake for 8-9 minutes until bottoms are slightly browned. This dough will make 16-18 cookies.
Allow the cookies to completely cool before adding the icing.
To make the icing healthier and lighter, I decided to make a greek yogurt icing with cream cheese. This icing is cool and refreshing, and perfect for a hot summer day!
To make the icing, beat cream cheese, greek yogurt, powdered sugar, and lemon juice together until combined. I recommend using a mixer because it is the easiest way to get the frosting consistency.
Lastly, top with fresh berries. I remember back in the day people acting like fruit pizzas were healthy (when they are far from it!), but this version you really don’t have to feel guilty about! They are just the right amount of sweet to feel like dessert, without being overkill (and without ruining your clean eating for the week).
Healthy Mini Fruit Pizza Cookies
1.5 cups lightly packed almond flour
1/4 tsp salt
3/4 tsp vanilla
2 tsp maple syrup
4 tbsp powdered sugar
6 tbsp butter
1 tsp water
3 oz cream cheese
1/4 cup greek yogurt
1/2 -1 tsp of lemon juice
5 tbsp powdered sugar
1. Combine all cookie ingredients in a bowl and mix until a dough is formed. If dough seems too dry, work in another 1/2 tsp water.
2. Combine all frosting ingredients and beat with a hand mixer for a 2 minutes until all ingredients are combined and you reach a smooth, thick consistency.
3. Top cookies with whatever fresh fruit you’d liked. Keep refrigerated until serving because frosting will loosen as it gets warm.
