We can all agree that cookie dough is one of life’s greatest pleasures, and I’ve tried pretty much every edible cookie dough recipe out there, healthy and not healthy. The unhealthy ones are obviously delicious because they just eliminate the eggs, but they are still soooo horrible for you and should really be reserved for an every once in a LONG while treat.
I’ve also tried the healthy ones, and most of them are absolutely disgusting. I remember one in particular that was made with chickpeas. I gagged while eating it and ended up wasting tons of ingredients.
This recipe below is the BEST, HEALTHY edible cookie dough recipe you will eat. Packed with healthy fats and protein, it is low carb and heavenly tasting.
Oh yeah, and you literally just stir the ingredients together, and it’s done.
And it makes JUST ENOUGH so you don’t have tons left over to stuff yourself with.
I created this recipe because sometimes weekdays are long and you have a bad day at work and cookie dough is the only medicine that can help. We all have those days, and with this recipe, you can feel good afterwards. Let me know what you think!
Healthy Edible Cookie Dough (Grain Free, Gluten Free, Dairy Free)
5 tbsp almond flour
2 tbsp coconut flour
1 tbsp light brown sugar
1 tbsp almond milk
1/4 tsp vanilla
1 tbsp honey
2 teaspoons almond butter or peanut butter
3 tbsp dark chocolate chips
1. Combine almond flour, coconut flour and light brown sugar in a bowl and whisk together.
2. Add wet ingredients to dry: almond milk, vanilla, honey, and nut butter. Stir until a thick dough forms. If it seems too wet, add one tablespoon of almond flour. If it seems too dry, add one tablespoon of almond milk.
3. Add dark chocolate chips and mix. Refrigerate the cookie dough for 10-15 minutes (or just put in the freezer for 5) to allow it to firm.
4. Enjoy! Store leftovers (if there are any!) in an airtight container in the refrigerator.
