It’s my husband’s birthday week, so I’m taking his requests for what I make this weekend. The first thing he requested was my Grain Free, Low Carb Chocolate Chip Cookies. He just cleaned out my freezer stash of these cookies last week and already wants more! I even said, “Are you sure you don’t want real, “bad for you” chocolate chip cookies, it is your birthday week after all?” But NOPE! He likes these more. So, if you haven’t tried those cookies yet, you need to!
The next thing he requested was a batch of Protein Puppy Chow. I’ve been making this for him since we started dating, and it’s one of his favorite snacks. It’s so simple to make and completely guilt free because all of the sweetness comes from protein powder! There’s no extra added sugar whatsoever. This is a protein packed snack perfect for that long stretch between lunch and dinner or even as a weeknight dessert.
To prepare, add coconut oil and peanut butter to a glass bowl and microwave for about 45 seconds.
Stir the coconut oil and peanut butter together. This should be a smooth, melty mixture.
Add your Rice Chex to a gallon size ziplock bag.
Pour the peanut butter/coconut oil mixture over the cereal, then shut the bag and shake until the cereal is coated.
Next, add your cocoa powder and protein powder to the to the bag and shake again until they coat the cereal. You can use any protein powder that you have on hand, which is the best part. I’ve made this with vanilla, chocolate, and even the protein powder flavor I always have in my pantry: mocha cappuccino. Then, pour it all onto a baking sheet to cool. Store in an airtight container at room temperature.
I actually pre-portion the puppy chow into separate ziplock bags so I don’t overdo it, because this stuff is addictive!
Protein Puppy Chow
Ingredients:
5 cups Rice Chex
1 tbsp coconut oil
1/3 cup natural peanut butter
1 1/2 tbsp cocoa powder
1 1/2 scoops protein powder (I use OPTIMUM NUTRITION GOLD STANDARD 100% Whey Protein Powder, Mocha Cappuccino, 2 Pound)
1. Microwave coconut oil and peanut butter in glass bowl for 45 seconds. Stir until smooth.
2. Add Rice Chex to large ziplock bag. Pour peanut butter/coconut oil mixture over cereal. Close bag and shake until cereal is coated.
3. Add cocoa powder and protein powder to bag. Close bag and shake again until coated.
4. Transfer cereal to baking sheet to cool. Store in air tight container or bag.
